Perfect for roast potatoes. Par boil the potatoes (Maris Piper or a King Edwards are best), drain well and fluff up. Add plenty of Goose Fat to a roasting tin and place in a pre-heated oven for approx. 10 minutes at Fan 200/ Non-Fan 220/ Gas Mark 7. As soon as the fat starts smoking, carefully add the potatoe chunks. Baste well and place them in the oven for approx 45 minutes. Turn and baste them occassionally to ensure they are golden and crunchy all over.
